From Forgotten to Fabulous; The Story Behind Our Building

Every great taproom has a story—and ours begins with a worn-down building, a vision, and a whole lot of heart.

When we first laid eyes on this old structure on the edge of downtown Cedar City, most people saw faded paint, cracked concrete, and doors that hadn’t swung open with purpose in awhile. But we saw something more. We saw potential. We saw a place where the community could gather, laugh, connect, and make memories. And just like that, Coal Creek Taproom & Eatery was born.

🔨 The Vision: Raw, Industrial, and Full of Soul

We wanted to preserve the grit and character of the original building—honoring its past—while layering in warmth, elegance, and a touch of that speakeasy charm. Our design leaned into charcoal black walls, rich wood textures, and copper accents to give it an industrial yet inviting feel. 

And yes, the makeover is still unfolding.

🖌️ What We’ve Done So Far

  • Painted the exterior walls a bold charcoal black for instant drama and curb appeal
  • Framed out new wood accents to bring in warmth and tie in the historical western aesthetic
  • Cleaned up and leveled the grounds, making way for a welcoming, elevated patio
  • Added fresh paint to the doors to clean them up and give them a bold fresh look
  • Along with a lot of demo on the inside and prep work for the sub contractors

🧱 What’s Still to Come

We’re not done yet—and we like it that way. Here’s what’s still on the way:

  • A jet-black roof to tie the look together and give a sleek silhouette
  • Copper trim and fixtures that pop against the dark backdrop and add a touch of shine
  • A Brick feature to nod to early 20th-century design and the area’s history
  • Custom lantern lighting to create that speakeasy glow, especially after sunset

🌆 Why This Matters to Us

Coal Creek Taproom isn’t just a bar and eatery—it’s a community space. We’re building something we hope Cedar City is proud of. A place where people feel the energy the moment they walk through the door. A place where the design reflects both the past and the future. And a place where food, drink, and people come together to create something unforgettable.

We’re excited to bring this vision to life, one beam, brick, and brushstroke at a time.

From Troy NY to Cedar City UT:  My journey through food, family, and big dreams growing up in Troy, New York, I was surrounded by blueprints, work boots, and the steady rhythm of the construction world. Entrepreneurship was in my blood- it ran deep through my family’s legacy in the building trades. I learned early on what it meant to build something from the ground up, not just with tools and materials, but with grit, vision, and long hours. But life had more in store for me than concrete and cranes. Building Coal Creek Taproom With My Person

Scott and I? We’re building a bar.  While we still love to bond over cozy movies on the couch, hiking around beautiful So. UT, or sitting on a country road watching the sunset with the music a little too loud. Things have changed a bit! Our cooking in the kitchen together now always includes restaurant planning. Dressing up to go sip cocktails is now a business venture. Research, planning, discussing flavors and presentation, and meeting musicians. Long Sunday drives become business meetings with planning, calendaring, and discussing. While we notice out lives are changing, our relationship continues to grow and strengthen. We have a lot of fun and turn every day into some kind of adventure! So what are we up to lately?
