A little bit about Amber

 Hi everyone!! I’m Amber Kate, my family jokes that I should’ve been named Amber Cake because of my raging sweet tooth and passion for baking treats!! 

I am the youngest of 4. My parents are business minded people and raised me to be the same. I grew up helping at gun shows and started working at the family grocery store as soon as I could reach the keys on the cash register standing on my tiptoes.

I grew up in a super tiny town and loved claiming it as my own little wonderland ready to explore. Riding bikes, roller blading, night games, walks in the creek, daily lunch with my folks at the local cafe, camping, and of course playing store in the attic or basement of the old historical building were what filled my days. 

After graduating high school I moved to Cedar City and started my family right away!! As a young mom, I became passionate about what’s best for children and spend hours and hours attending classes, workshops, conferences, and trainings to become well versed in what’s best for children and my passion overflowed into raising others’ precious children and spent 17 years running a successful childcare out of my home. As my kids became involved in extra curricular activities, we got sick of the traditional fund raising events where they’d try to sell things to everyone they possibly could, we started to feel like we could provide more delicious options to sell and make a bigger profit on that than what was being offered. And so Lil’ Reds Cheesecake Haven was born. We started out small but without having anything like it in town it took off and before I knew it my small contribution to bake for fundraising turned into a small cheesecake baking business as a side hustle. As my children grew and became teenagers and as life transitioned I found myself wondering what the next entrepreneurial adventure would be.

With Coal Creek Taproom and Eatery opening soon, I can’t wait to create this incredible space in an incredible town full of the most amazing people!!! Southern Utah has needed a delicious place for locals, travelers, family, and friends to gather, eat the most delicious foods, and sip on cocktails that are beyond expectation. 

When I’m not working or thinking about work you’ll find me outside!!! I absolutely love the area we live in and I love traveling to see and experience other cultures and landscapes. I love to go for drives, hike, walk, or even just lay out and soak in the sunshine.
